Meals for the month

I find that if I cook a dinner about every other day, we have plenty of food. (There is a continual stream of leftovers this way.) Most dishes I make serve us both 2-3 meals… so that’s 4-6 servings, I guess!

Anyway, here is my list of meals for the month. I haven’t made more than one or two of them before… that’s the way I usually cook. Let’s hope they’re edible!

In no particular order:

Southwestern Vegetarian Pasta
Home Style Brown Rice Pilaf
Middle Eastern Rice with Black Beans and Chickpeas
Lentils for Stagflation (Go ahead and laugh, I sure did!)
Chinese Chicken Rice Salad
Beef Barley Vegetable Soup
Salmon (served with rice and salad)
Vegetarian Chickpea Sandwich Filling (put onto pita bread)
Tex Mex Burger with Cajun Mayo
Rice and corn and salad (the official cheapo meal that leaves you ready for dessert!)
Vegetarian Jambalaya (with chickpeas added)
Addictive Sweet Potato Burritos
Greek pasta with Tomatoes and White Beans
Egg Fried rice with veggies

Most of them don’t get me excited, although I’m curious about the Sweet Potato Burritos and the Greek Pasta looks tasty. I’ll letcha know… now and then I find something I wouldn’t mind making again! (The Cajun burgers are tasty!!!)

    Yum! We topped the Middle Eastern Rice with Black Beans and Chickpeas (what a mouthfull! ;-)) with plain yogurt and a little lemon… all inside of tortillas. They are yummy! Instead of 1 quart broth and the rice, I used 2 cans broth and 1 cup brown rice. Not runny, not dry. Not too spicy – would be a little bland without the yogurt and lemon. Looks like the leftovers might be easy to freeze, which is a bonus!

    If you make the vegetarian chickpea sandwich filling, don’t put in too many onions like I did! It’s good on pita bread or regular bread topped with cheese and lettuce. It is very similar to a tuna salad…. just no tuna! Putting the chickpeas in a food processor would be easiest, but a potato masher works fine. The burgers were wonderful as always and the jambalaya is very tasty (add more spices than called for) especially on a tortilla with sour cream and cheese.
